The main feature of modular ovens is the possibility to re-configure their structure according to one’s needs.

To this end, it is possible to compose the oven using the following elements :

  • Amount of rooms installed (1 to 4)
  • Useful internal height of the chambers (18 or 23 cm)
  • A leavening cell or an enclosed cake stand
  • A fume hood or no fume hood
  • A steamer for one or more chambers

Open stand for 40×60 baking trays.
The structure, made entirely of stainless steel, allows 6 to 18 40×60 baking trays to be laid. In addition, the structure is easy to clean and maintain, as well as adding a touch of sturdiness to the oven.

The hood is the terminal element of the oven and has the task of collecting and channeling the vapors produced during firing.

The hood is supplied complete with:
– stainless steel steam collection box
– stainless steel front sheet
– cover panels (side and back)

Upon request, it is possible to force the suction of vapors by installing a motorized suction snail on the hood.

The humidification unit is installed in the right chamber compartment.
Placing the humidifier outside the chamber offers several advantages :
– in case of service or cleaning, the humidifier is easily accessible
– the temperature of the humidifier does not affect the baking of the product
– installation/replacement operations are extremely easy

Accessories

Optionals

In the standard version, the oven is arranged to be powered at a three-phase voltage of 230V or 400V (value to be specified when ordering).
However, upon request, it is possible to supply the oven with a SINGLE-PHASE voltage of 230V. The frequency of the supply voltage can be either 50 or 60 Hz.

THE OVEN MUST BE OBLIGATELY FITTED WITH A HOOD.
The hood in the standard version is supplied without an extractor fan.
Upon request, the oven can be made complete with an extractor hood.
The extractor nut is always made of STAINLESS STEEL.

If required, the oven can be supplied complete with a humidifier.
The high steam production generated by the new humidifier also makes this oven suitable for baking.
THE HUMIDIFIER IS PLACED UNDER THE OVEN THAT MUST , BY CONSEQUENCE, ALWAYS BE PROVIDED WITH A CELL.
